Home Made Pesto Sauce.

I love pesto sauce, and very often I make my own.  I use it in cooking or as a condiment to fish, meat, salads etc.  I also like pesto with pasta.  I have a great recipe, very easy to make and I learned to make it while I was working in an Italian restaurant in Canada.  This recipe is not only here on the blog but also our youtube channel.

Pesto is a sauce originating in Genoa, which is located in the northern region of Italy. It originated around the 16th century and traditionally consists of crushed garlic, basil and pine nuts blended with Parmesan cheese and olive oil.

There are so many different variations of pesto sauce, but this recipe has my own twist, because pine nuts are so very expensive here and it is very hard to find them in health food shops.  So, instead of pine nuts, I am using sunflower seeds.

However, you can use walnuts, or you don’t have to use any nuts at all, if you are allergic to nuts. You can still enjoy the aroma of basil, garlic and olive oil and the creaminess of parmesan cheese.  If you are vegan you can omit the cheese and use more nuts instead. 🙂

The name Pesto originates from the Genoese word pestâ, which means to pound or to crush. This refers to the way in which the authentic sauce is prepared, with a mortar and pestle. However, the translation may be a bit misleading because the preparation does not consist of pounding, rather it is of grounding. The reason the preparation is important is in order to release the full aroma of the basil leaf it must not be crushed.

1 cup of garlic cloves

3 cups of fresh basil leaves

1 cup of parmesan cheese

1 cup of raw sunflower seeds

2 cups of extra virgin olive oil

1 lemon juice

2 teaspoons of sea salt


Place all of the ingredients in a food chopper.  Pulse it until coarsely chopped, unless you like a more smooth texture of the pesto sauce.  Place it in a jar and keep in a cool place for up to two weeks or one month in a fridge.
