Firstly, before I write this recipe, I am not vegetarian or vegan, I just eat a lot of veggies in my diet, but this recipe is suitable for vegetarians and even vegans, so enjoy it!
Secondly, I always eyeball my ingredients, so I am not exact with my ingredients, but the amount I put in my recipes works for me great.
Feel free to experiment. Suit your own taste. Don’t be afraid to add your own twist to everything.
I love lentils and I must admit I digest them more easily then any other kind of beans: red, white etc.
They are so healthy. They are a good source of potassium, calcium, zinc, niacin and vitamin K, but are particularly rich in dietary fibre, lean protein, folate and iron.
I always make lentil soup with vegetables, but today I decided to make it “chilli style”.

1 cup of lentils
Hortex Mexico Mix Veggies 400 gr ( Hortex is not sponsoring me to do this), I just love Hortex frozen veggies, they are very good quality. If you can’t buy Hortex frozen veggies in your country, here are the ingredients, but please feel free to add any veggies of your choice: carrot, peppers, green beans, green peas, corn, onion, celery, red kidney beans. But, as I said, please use anything you would like.
2 and half cups of tomato sauce (500 ml), or you can use less depending on your taste, but I like tomato sauce so I use a lot of it.
1 chopped onion
1 clove of garlic
1 cup of water or more, depending how thick you would like your chilli to be.
Well spices are crucial to making a chilli to actually taste like chilli 🙂
1/2 teaspoon of ground cumin
1 teaspoon of dry cilantro leaves ( Use fresh if you are lucky to have it fresh at this time of the year). Here in Bosnia you can’t buy fresh herbs, not yet, unfortunately. But we grow our own in the summer in our garden.
1 teaspoon of smoked paprika ( very hard to find it here in Bosnia, but my darling is British and when he goes back to England to visit his family he get’s me all the spices that we don’t have here in Bosnia.)
1/2 teaspoon of ground coriander seeds
1 teaspoon of oregano
1 teaspoon of salt (I use pink Himalayan salt)
1/4 teaspoon of cayenne pepper
Pre-soak the lentils for a few hours prior to cooking. Rinse them well and cooked them. When they are cooked strain them and put them on the side. In a large pan or a wok, heat 2 table spoons of olive oil or any oil of your choice.
Then simmer the onions. When the onions are translucent then you can add your Hortex Mexico Mix or any other vegetables of your choice.
Simmer for few minutes, then add cooked lentils, tomato sauce and all the spices, including 1 clove of garlic finely chopped or pressed. You can add some water now if you would like. Cook at low-medium heat for about 20 minutes or to your desired look. Don’t forget to stir it every few minutes. You can serve your lentil’s chilli with what ever you like. Enjoy!
